Today's baking class was great. For once, everything fell into place exactly as it should. Chef Zombori told me I did everything perfectly today. Wow - what an excellent feeling that big "atta girl" gave me.

Today I made Crème Pâtissière, Pâte a Choux (Éclair Pastry), and Crème Anglaise. No scrambled eggs this time! Wish I'd had my digital camera with me so you could see how beautiful it all was.

Which reminds me - I think I'll go make a pot of coffee and have an éclair!
